Air fryer Potatoes and Carrots
You can make potatoes and carrots in air fryer at the same time with just a simple seasoning mix & very little oil. We used unpeeled red potatoes but you can also use unpeeled Yukon gold potatoes or baby potatoes.
Herb roasted potatoes and carrots are so versatile, you can use your favorite seasoning mix or grab our favorite homemade salt free Cajun seasoning or salt free fajita seasoning. The tender buttery potatoes with crispy herb coated outsides are addictive. You'll also love the sweet flavor of the slightly caramelized carrots.

Ingredients and Substitutions
Find the Ingredients with actual measurements at the bottom of the post. The list below is just a reference.
- Potatoes: We used unpeeled red potatoes diced into ½ inch cubes. You can also use unpeeled Yukon gold potatoes or halved and unpeeled baby potatoes. They all have the same cook time.
- Carrots: You do not need to peel the carrots. Just rinse the carrots under running tap water and trim the ends. Dice the carrots into ¼ inch circles.
- Seasonings: We used homemade salt-free Cajun seasoning and salt according to our own personal taste preference. You can also use our homemade salt-free fajita seasoning or use a mix of rosemary, paprika, oregano and ground black pepper. You can also use Italian seasoning and paprika. Also, add red pepper flakes if you prefer a slight kick.
- Oil: We used olive oil. You can also use avocado oil. So good for high heat cooking. Do not use extra virgin olive oil.
Tips for success
- Dicing carrots & potatoes: Dice the unpeeled potatoes into 1 inch cubes and the carrots into ½ inch circles. No need to peel the carrots. Just rinse them well and trim the ends. Dicing them this way will ensure in an even cooking.
- Prevent burnt seasonings flavor: Add the seasonings to the roasted potatoes and carrots in air fryer after air frying them for the initial 15 mins. Air fry the potatoes and carrots mixed with oil first and than add the seasonings, mix well and air fry for another 5-6 mins. This will prevent the seasonings from getting burnt and prevent the slightly bitter burnt after taste.
- Cook time & air fryers: We tested this recipe using our Instant vortex air fryer, Bella air fryer and also using the instant pot air fryer lid. The cook time might slightly vary depending on your air fryer brand, model and make. If you love a very crispy outsides and well caramelized carrots do increase the cook time by 3-4 mins.
How to make air fryer carrots and potatoes?

- Prep potatoes & carrots: Dice the unpeeled potatoes and carrots. Rinse them, drain them and pat them dry completely with kitchen towels. Coat the diced potatoes and carrots with olive oil.
- Air fry: Air fry in a pre-heated air fryer (400 F) for 15 mins. Add the seasonings & salt on top of the diced potatoes and carrots, mix them well until they are well coated. Air fry again for another 5 mins. Serve immediately and enjoy!
Oven method
Roast the potatoes and carrots at 400° on a baking sheet lined with parchment paper for about 30 minutes (or until tender inside). Stir them every 10 minutes.

Leftovers & storage
You can store the roasted red potatoes and carrots for upto 5 days in the fridge in air tight containers.

Air fryer: You can reheat roast potatoes and carrots in air fryer for 2-3 mins (pre-heated air fryer at 400 F).
Microwave Oven: You can also reheat the herb roasted potatoes and carrots in the microwave oven oh high for just 1 min.
FAQs
Potatoes need not be soaked in water before air frying. Just rinse them in water after dicing them. This will help remove some of the starch resulting in crispy outsides and also prevent the raw diced potatoes from turning grey.
No, you do not need to blanch potatoes before air frying. You just need to rinse the diced potatoes under running tap water, drain them and pat them dry completely before tossing them in seasoning and oil for air frying.

Ingredients
- 1 pound potatoes - **unpeeled red potatoes diced into ½ imch cubes.
- 1 pound carrots - **unpeeled carrots diced into ½ inch or ¼ inch circles.
- 1.5 tablespoon cajun seasoning - **homemade. We love this recipe so much.
- 1 tablespoon olive oil - **use extra light or light olive oil. You can also use avocado oil.
- salt to taste - **add salt according to your own personal taste prefernce.
Instructions
Prep potatoes and carrots
- Dice the unpeeled red potatoes into ½ inch cubes. Rinse them in water, drain them and pat them drym with kitchen towels. Rinse the whole carrots, pat them dry with kicthen towels. Trim the carrot ends and dice the unpeeled carrots into ½ inch or ¼ inch circles. Place the potatoes and carrots in a large bowl. Add oil and toss them well until the carrots and potatoes are well coated.
Air fry
- Pre-heat the air fryer into 400 F for 2-3 mins. Add the oil coated diced potatoes and carrots. Air fry at 400 F for 15 mins. Shake the basket every 5 mins.
- After 15 mins. Take out the air fryer basket and sprinkle the homemade cajun seasoning and salt (according to your own personal taste preference) on the dices potatoes and carrots. Mix them well with the help of a spatula. Make sure that they are well coated with the seasoning. Air fry at 400 F for another 5 mins. Shake the basket after 2 mins. Notes
- Best Potatoes: Use either Yukon gold potatoes or red potatoes. You do not need to peel the potatoes. The skins turn out so crispy in the air fryer and taste amazing!
- Seasoning: You can sub the salt-free Cajun seasoning with homemade salt-free Fajita seasoning or a simple seasoning mix like - Italian seasoning + paprika + ground black pepper or rosemary + oregano + paprika + ground black pepper. For spicy flavor add red pepper flakes or a few pinches of cayenne pepper.
