- Sweet Potatoes: Peeled and cubed into ½ inch pieces.
- Onion: You can use either yellow or red onion.
- Seasonings: Sweet paprika, red pepper flakes for a slight kick, crushed black pepper, thyme, Himalayan pink salt.
- Oil: Extra light or light olive oil. You can also use avocado oil. Incase you want to make the recipe oil free just replace the oil with 2-3 tablespoons regular water.

- Uniform cooking: Dice the sweet potatoes into ½ inch cubes and halve the brussel sprouts. This will ensure even cooking of the veggies.

- 1 pound brussel sprouts - **rinsed, drained and halved.
- 2 cups sweet potatoes - **peeled and diced into ½ inch cubes.
- 1 cup onion - **diced into 1 inch large squares, petals separated. Use either yellow or red onion. 1 large or medium onion.
- 2 tablespoon olive oil - **use light or extra light olive oil.
Seasonings
- 1 teaspoon paprika - **sweet paprika.
- 1 teaspoon thyme
- ½ teaspoon red pepper flakes - **skip if heat intolerant.
- ½ teaspoon ground black pepper - **or freshly crushed black pepper.
- salt to taste - **use according to your own personal taste. We used pink Himalayan salt.
Instructions
Prep Veggies
- Rinse the whole brussel sprouts under running tap water. Discard any lose wilted leaves. Drain them well with the help of a colander. Halve the drained brussel sprouts. Peel and dice the sweet potatoes into ½ inch cubes. Dice the onion into 1 inch large cubes, separate the petals. Put the veggies and the onion in a large bowl.
Season veggies
- Add the oil, salt according to your personal taste and all the seasonings mentioned above in the "Seasonings" section of the ingredients list. Toss the veggies to coat them well with the oil and the seasonings.
Air fry
- Pre-heat the air fryer at 370 F for 3-4 mins. Transfer the veggies into the air fryer basket, spread them into an even layer with the help of a spatula. Air fry for 25-30 mins shaking the basket every 5-6 mins for even cooking (the cook time might slightly vary depending on your air fryer make, model and brand).
