For the salad
- Beans: Black beans and black eyed peas. You can also add chickpeas, swap the black beans with red kidney beans and black eyed peas with cannellini beans. There are many variations of this ultimate cowboy caviar recipe.
- Veggies: Red & green bell pepper, sweet corn, avocado, roma tomatoes, jalapeno for a spicy cowboy caviar recipe. Skip Jalapeno if you are heat intolerant and add a pinch or two of red pepper flakes. You can also sub the tomatoes with diced cherry tomatoes.
- Onion: I use red onion. You can also use yellow onion or sub the onion with chopped green onion for a milder salsa dip version.
- Cilantro: Adds a fresh vibrant flavor. You can sub the cilantro with parsley if you do not prefer cilantro.
For Dressing
- Olive Oil: Use extra virgin olive oil. For vegan cowboy caviar no oil version just leave out the oil.
- Garlic: Fresh minced garlic. It adds a lot of depth of flavor! Add more if you are a garlic fan.
- Lime Juice: Freshly squeezed lime juice.
- Sugar: I used coconut sugar. You can use either brown sugar or turbandino sugar or white sugar. Skip the sugar if you are on a no sugar diet.
- Red pepper flakes: It adds a bit of kick to the recipe. This is an optional ingredient.
- Salt: Add salt according to your own personal taste preference. Much better if you add the salt later just before serving the Texas caviar dip.

Step #1 Chop/dice ingredients
Chop the red onion, bell peppers, parsley and avocados according to the recipe instruction. Also, mince the fresh garlic cloves for the salad dressing. Set them aside.
Drain the beans and corn from the can. Add all the chopped veggies, drained beans & corn in a large bowl.
Step #2 Prepare the cowboy caviar dressing
Whisk together - olive oil, minced garlic, red pepper flakes, lime juice & sugar in a small bowl to form a fantastic chili lime dressing for the texas caviar recipe.
Step #3 Assemble the southern caviar dip

Ingredients
- 15 oz black beans - **drained.
- 15 oz black eyed peas - **drained.
- 15 oz corn - **drained.
- 3 avocados - **diced into ½ inch cubes. I used medium avocados. If using large avocados use only 2.
- 3 roma tomatoes - **roughly chopped.
- ½ cup red bell pepper - **diced into small cubes.
- ½ cup green bell pepper - **diced into small cubes.
- 1 jalapeno - **de-seeded & roughly chopped.
- ⅓ cup onion - **red onion roughly chopped.
- ⅓ cup cilantro - **roughly chopped.
Dressing
- ½ cup olive oil - **extra virgin olive oil.
- ½ tablespoon garlic - **minced.
- 3 tablespoon lime juice - **or use lemon juice.
- 2 teaspoon sugar
- ½ teaspoon salt - **use more or less according to your personal taste preference.
- ½ teaspoon red pepper flakes - **optional.
Instructions
- Add the beans, corn, bell peppers, tomatoes, onion, jalapeno pepper, cilantro in a large bowl. Toss and stir them well to mix everything very well.
Make the dressing
- In a separate bowl add all the ingredients mentioned above in the "Dressing" section of the ingredient list. Whisk them well to make the dressing.
Assemble the cowboy caviar
- Pour the dressing over the ingredients in the large bowl. Toss and stir everything very well to mix things up. Add the diced avocados and gently stir to mix it with other salad ingredients. Serve immediately or keep refrigerated if you plan to serve it later.
Notes
- Jalapeno: Skip the jalapeno if you are heat intolerant. You can de-seed the jalapeno to reduce the heat.
- Red pepper flakes: This will add a subtle kick to the healthy cowboy caviar dip. However, if you are making it for kids than skip adding the pepper flakes.
- Lime juice: Sub it with lemon juice. You can even play around with the quantity. If you prefer a tart dip add more lemon/lime juice.
- Leftovers: Do store the leftovers in the fridge and toss and stir the dip well before serving it. The onions might not have the same amount of crunch.
- Black beans: You can sub it with red kidney beans.
- Corn: You can sub the canned corns with fresh steamed corns or use frozen and thawed corns ( about 1.5 cups).
- Cilantro: If you do not prefer cilantro do sub it with fresh chopped parsley.
