- Butternut Squash: A whole unpeeled butternut squash is all you need. Do not buy the ones with soft spots or the one that feels super light in weight!
- Seasonings: Paprika, thyme, red pepper flakes, garlic powder, pink Himalayan salt or use normal table salt.
- Oil: Extra light or light olive oil.
- Cooking Oil Spray: Our favorite is avocado cooking oil spray.
Tips for Success
- Cutting Butternut squash: Peel and cut the butternut squash roughly into equal sizes for even cooking.
- Crispy butternut squash fries: For crispy butternut squash fries air fryer recipe cook the fries in 2 batches instead of cooking in one single batch. Do not over crowd the fries in the air fryer basket! For instance, 1 large butternut squash diced into fries needs to be cooked in 2 batches. Check the fries after 15 mins. Today's recipe is one large butternut squash cooked in a single batch hence the fries are not very crispy but crispy around the edges.
- Seasoning variations: You can add your favorite herbs & seasonings to make these fries. You can even make them tangy by adding 1-2 tablespoon lemon juice & spicy by adding red pepper flakes & cayenne.
- Make ahead tip: I would always recommend that you peel the butternut squash and dice into fries well ahead of time & air fry whenever craving strikes! You can store the pre-diced butternut squash fries for up to 7 days in the fridge.
How to cook butternut squash fries in air fryer?

Step #1 Cut Butternut squash into fries
- Prep butternut squash: Rinse the whole butternut squash under running tap water to remove any dirt or debris. Pat it dry with the help of kitchen towels. Than, cut the butternut squash in half. Peel each half, than cut each half into 4 slices lengthwise about ¾ or ½ inch in thickness.
- Cut into fries: Cut those slices into long fries about ½-3/4 inch thick. Try to cut the fries in equal sizes so that they cook evenly in the air fryer. Scoop out any seeds before cutting the fries. Set the fries aside in a large bowl.
Step #2 Air fry & serve
- Season well: Add all the seasonings, lemon juice, olive oil, salt on the fries and toss them well. Make sure that the fries are well coated with the seasoning.
- Air fry: Pre-heat the air fryer to 400 degrees Fahrenheit. Spray the air fryer basket with cooking oil spray. Transfer the seasoned butternut squash fries into the air fryer. Spread them out evenly as much as you can with the help of a spatula. It's ok if few fries stack on top of each other. Air fry for 18-20 mins depending on how crisp & brown you want your fries. Shake the air fryer basket every 5 mins to ensure even cooking and browning. NOTE: If you cook a small batch you need to reduce the cook time to about 12-15 mins. Do check them in-between. Once done, serve them with your favorite dipping sauce.
Can you freeze butternut squash fries?
I have not tried freezing any leftover fries because there's always no leftover in my house! But you can totally freeze the pre-diced uncooked fries for upto 3 months. Use heavy duty freezer safe bags or containers.
You can either thaw and air fry the fries or air fry them directly from frozen. In that case you need to slightly adjust the cook time.
How to store
You can store the air fryer butternut squash fries for upto 5 days in the fridge. Use air tight containers to store them well.
How to reheat
Air Fryer: You can reheat the fridge cold fries in the air fryer at 400 F for 2-3 mins.
Microwave oven: Reheat the fries in the microwave oven until warm or hot.

- Is this recipe spicy? No, this recipe is not spicy. However, it has a mild kick. If you are making this for kids do skip adding the red pepper flakes.
