You can also make this recipe oil free by simply rubbing the potatoes in water or veggie stock at first & than tossing them with the seasoning.

Ingredients & Substitutions

- Baby Potatoes: I used baby gold potatoes. You can also use baby white potatoes or baby red potatoes. The cook time would remain the same.
- Oil: Extra light or light olive oil works best. You can sub it with avocado oil.
- Seasonings: Sweet paprika, thyme, pink Himalayan salt, red pepper flakes. We love a bit of kick. Skip the pepper flakes if you are making it for kids. You can also sub the thyme with chives, they have a sweet subtle aroma similar to onion & taste very good in this recipe.
- Lemon Juice: Adds a bit of tang to the recipe. You'll love it. Always use freshly squeezed lemon juice.
- Cooking spray: Avocado oil spray. We always love to spray the air fryer basket with a cooking oil spray. If you do not have it handy you can brush a few drops of oil on the surface of the air fryer basket.

- Prep the baby potatoes: Rinse them well under running tap water and remove any dirt or debris. Pat them dry with a kitchen towel.
- Best flavor: Season the potatoes well for best flavor & air fryer until the outer skin turns crispy. Every bite will reward you with crisp outer skin and tender melt in the mouth insides. So good!
- Air Fryer baby potatoes no oil: You can swap the oil in this recipe with a few splashes water or vegetable stock. Sprinkle the seasonings & gently rub them to coat the potatoes well. Immediately pop them in the air fryer.

Step #1 Season & Coat baby potatoes
- Prep Potatoes: Halve the unpeeled baby gold potatoes, rinse them well under running tap water to remove all dirt and debris. Drain them and pat them dry with the help of a kitchen towel.
- Season baby potatoes: Add all the seasonings, lemon juice, olive oil & salt and rub the potatoes to coat them well.
Step #2 Air Fry Baby Gold Potatoes
- Air fry: Spray the air fryer basket with cooking oil spray, transfer the baby potatoes into the basket and air fry at 400 F for 15 mins, shaking the basket half way through. If you prefer very crispy potatoes you can add 2-3 additional mins until the outer skin of the baby potatoes turn very crispy. Serve with your favorite sauce and enjoy!
Leftovers & Storage
Fridge: You can store the air fryer roasted potatoes for upto 5 days in the fridge. Use air tight containers.
Freezer: You can freeze the air fryer baby potatoes for upto 3 months. Use heavy duty single serving freezer containers. That way it'll be easier for you to pop each container out as required, thaw, reheat and serve.
How to reheat
Fridge: Place the air fryer baby gold potatoes in a microwave safe plate and reheat in the microwave oven until warm or hot. The potatoes will lose a bit of crispness. You can also reheat the potatoes on a skillet placed over medium high heat. No need of extra oil. Just place the potatoes in the skillet and stir them to reheat evenly.
Freezer: Thaw the frozen potatoes overnight in the fridge first and than follow the reheating directions shared above.

- ½ teaspoon thyme
- ½ teaspoon oregano
- ½ teaspoon red pepper flakes - **skip if heat intolerant or making for kids.

- ¼ teaspoon cayenne pepper - **optional. DO NOT use if you are heat intolerant.
- 1 tablespoon lemon juice - **freshly squeezed lemon juice.

Instructions
Prep Baby Potatoes
- Halve the potatoes and transfer them into a bowl. Rinse the halved baby potatoes very well under running tap water. Remove all dirt & debris, drain them and pat them dry with the help of a kitchen towel.
Air Fry Baby Gold Potatoes
- Pre-Heat the air fryer at 400 F. Add all seasonings mentioned above in the ingredients section along with the olive oil, salt, lemon juice into the bowl containing the halved baby potatoes. Coat the halved potatoes very well.
- Spray the air fryer basket with cooking oil spray and transfer the seasoned baby potatoes into the air fryer basket. Spread them into a single layer. It's ok if few potatoes stack on each other.
- Air Fry for 15 mins at 400 degrees F. After 8 mins open the air fryer basket and give it a good shake. You can toss and turn the potatoes now. Pop the basket inside the air fryer and continue cooking for the rest of the time (7 mins) or until the potatoes are nicely golden and crispy on all sides. Serve with your favorite dip or your favorite protein and a side salad or steamed veggie (Options included above in the post).
Notes
- Best Potatoes: You can also use baby white or baby red potatoes instead of baby gold potatoes. The cook time would remain the same.
- Cayenne & red pepper flakes: This air fryer roasted baby potatoes recipe has a bit of a kick to it. Skip adding the cayenne & the red pepper flakes if making it for kids.
